Spaghetti with vegan sauce

Ingredients:
-mushrooms
-carrot
-celery
-red onion
-green&red pepper
-zucchini
-tomato
-tomato sauce (unless you have enough tomatoes which I didn't this time)
-oregano
-pepper
-garlic
-salt
-olive oil (for the pasta)
-coconut oil (for the sauce)

Preparation:
-Cook the pasta
-Saute all the ingredients with exception of the red&green pepper
-When ingredients are cooked add the tomato sauce and the green&red peppers, a lower the temperature, keep it there for 5 more minutes, or until the sauce its warm
-Serve with oregano...lots of oregano!!

Vegan Tacos

Ingredients:
-Tortillas
-Corn/choclo
-Green&Red peppers/morrón verde y rojo
-Onion/Cebolla
-Mushrooms/Champiñones
-Avocado/Palta
-Tomato

Preparation:
-Prepare a guacamole with the avocado and tomato
-Cook the corn
-Saute all the other ingredients
-Put the tacos on the oven

Amazing Beans

Ingredients:
-Butternut Squash/Zapallo
-Tomato
-Celery/Apio
-Onion/Cebolla
-Corn/Choclo
-Salt
-Pepper/Pimienta
-Oregano
-Cilantro
-Other spices/Otros condimentos

Preparation;
-Soak Beans overnight/dejar porotos remojando la noche anterior
-Add all ingredients (but corn) to a pot a cover with cold water/Meter todos los ingredientes (menos el choclo) a una olla con agua fria.
-Cook for around 40 minutes/Cocinar por 40 minutos
-Add the corn/Agregar el choclo
-Serve with cilantro/servir con cilantro

Arvejado

I just used the leftovers from the last veggie soup and added fries to it. Amazing. In Chile this is served with Chicken and it's known as "Pollo (chicken) Arvejado (arvejas=peas).

-Take all ingredients to boil
-add corn and peas at the end
-serve with cilantro
