Sopaipillas con pebre (vegan recipe)

Typical chilean pastry. Although the are all over Latin America, this recipe is the one used in Chile.

Ingredients:
- 5 cups of flour
- 1 tsp of yeast
- 1 cup of pumpkin
- 3 Tbsp of oil (non vegan recipe is with butter)
- Salt for the dough
- Enough frying oil





Preparation:

- Cook the pumpkin and then make a pure(save the water)
- In a big bowl put the flour, yeast, salt, oil and pumpkin pure
- Start mixing it all together and go adding water used to cook the pumpkin
- When the dough is very soft, let it stand for around 25-30 minutes for the yeast to make his thing
- Roll out the dough to half to 1 cm thick and cut into 10 cm diameter (or whatever you like)
- Poke 2 or 3 times with a fork
- Fry until light brown (3-4 min)

*You can serve with pebre
Ingredients:
- 1 onion (chopped)
- 2 tomatoes (chopped)
- some garlic
- vinegar
- olive oil
- pepper
- salt

Guiso de porotos / Mixed bean stew

The carnivore recipe goes with sausages. I am mixing 2 different recipes that I know from Chile,
because one of the recipe goes with pumpkin (also sausages and sometimes noodles), and the other one goes with corn, 2 different kind of beans, but because they're all mixed here....and I would love someone telling me that I can't do that :) cause I am sooooooooooo staburn...(staburn = porfiado para los que me conocen).




Ingredients:
- beans
- pumpkin (diced)
- corn
- onion (chopped)
- garlic (minced)
- carrot (grated)  
- leek (chopped)
- the spices you prefer

Preparation:
- put the previously soaked (overnight) beans on a pot with water
- on pan, stir fry the onion, leek, garlic and carrot
- when the beans are half-cooked (it takes them like 20 min), add the pumpkin and corn
- when the beans and pumpkin are cooked add the veggies 
- Serve with cilantro on top if you have some
