Butternut Vegan Cream

Ingredients:
-butternut (I prefer pumpkin but didn't have it)
-onion
-asparagus
-carrots
-celery
-croutons
-spices

Preparation;
-Saute everything
-add water and take to a boil
-blend
-heat again for a bit
-serve with the croutons

Lentils a la veganesa

Ingredients:
-lentils
-peppers
-carrots
-celery
-garlic
-scallions
-onions
-mushrooms
-tomato

Preparation:
-soak the lentils just for a little bit (around 15 minutes)
-saute all the vegetables, and start cooking the lentils separately
-mix both and let them cook together

Delicious Veggie Soup

Ingredients:
-zucchini
-red & yellow potatoes
-rice
-peas
-celery
-carrots
-onion
-red pepper
-garlic
-spices

Preparation:
-Saute all ingredients just for a bit
-Cover with water
-after around 40 minutes, add the peas

Vegan Chilean Completo (Hot dog...the real thing)

Ingredients:
-mushrooms
-onion
-tomato
-avocado
-green & red pepper
-vegenaise
-hot dog buns (or the kind I got)
-mustard & ketchup (optional

Preparation:
-chop everything in little cubes (except the avocado which goes mashed)
-saute everything but the tomato and avocado
-bread in the oven
-ingredients in the order of pictures.

Pappardelle with delicious homemade tomato sauce

Ingredients:
-2 tomatos
-1 onion
-1/2 green pepper
-2 carrots
-scallions
-garlic
-mushrooms
-oregano
-Pappardelle (use any pasta you want....this is more about the tomato sauce)
-nutritional yeast (optional)

Preparation:
-blend the 2 tomatoes, 1 carrot, 1 onion, half the mushrooms, and half green pepper (add tomatoes first to get liquid)
-chop the rest of the ingredients and saute for a bit
-add the sauce (add oregano and spices you like) and cook for as long as you like. I did it for about 30 minutes
-cook the pasta, mix, and enjoy


I added too much oregano, that's why it looks dark

Mushrooms Cucumber Sandwich

Ingredients:
-mushrooms
-onion
-green and red peppers
-tomato
-cucumber
-vegenaise
-mustard
-bread

Preparation:
-Saute everything but the tomatoes and cucumber
-Ingredients in the order you prefer (mine is on the pictures)
-Enjoy

Beans & Rice




Ingredients:
-rice
-beans (I used leftovers)
-mushrooms
-tomato
.garlic
-carrots
-scallions or green onions

Preparation:
-Saute the mushrooms, tomato, garlic, carrots and scallions
-Add the rice, mix and saute for a bit
-Add the spices you like
-Cover with water and let it cook
-Heat the beans (leftovers in my case) and mix with the rice
